Ingredients

  • 1lbchicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbspolive oil
  • 3cloves garlic, minced
  • 1cupheavy cream
  • 1cupchicken broth
  • 1/2cupsun-dried tomatoes, chopped
  • 1 tspItalian seasoning
  • 1/4 tspred pepper flakes (optional, for heat)
  • 1cupfreshly grated Parmesan cheese
  • 1package (20 oz) cheese tortellini (fresh or refrigerated)
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken:Season the chicken pieces with salt and pepper. In a large skillet over medium heat, heat the olive oil. Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove chicken from skillet and set aside.
  2. Sauté Garlic and Add Cream Sauce:In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes if using. Stir and bring to a simmer.
  3. Add Parmesan and Chicken:Stir in the Parmesan cheese until melted and the sauce is smooth. Add the cooked chicken back to the skillet and let it simmer in the sauce for 3-5 minutes.
  4. Cook Tortellini:In a separate pot, cook the tortellini according to package instructions. Drain and add to the skillet with the chicken and sauce. Toss gently to coat.
  5. Serve:Garnish with fresh basil or parsley and serve immediately.

Notes

For extra flavor, use sun-dried tomatoes packed in oil, and add a tablespoon of the oil to the sauce.
Adjust the sauce thickness by adding a splash of pasta water or more broth if needed.
