A fresh and healthy twist on dinner featuring zucchini noodles tossed in basil pesto, cherry tomatoes, and toasted pine nuts.


Ingredients

  • 2medium zucchinis, spiralized
  • 1/2 cupbasil pesto (store-bought or homemade)
  • 1 cupcherry tomatoes, halved
  • 1/4 cuppine nuts, toasted
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large skillet, lightly sauté the zucchini noodles over medium heat for 2-3 minutes until just tender.
  2. Remove from heat and toss with basil pesto, cherry tomatoes, salt, and pepper.
  3. Serve topped with toasted pine nuts and grated Parmesan cheese if desired.

Notes

For a vegan option, omit the Parmesan cheese.
Feel free to add other vegetables or proteins for a heartier meal.
