- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon paprika (optional)
- 2 tablespoons fresh Italian parsley, chopped
- Lemon slices, for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
- In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, and paprika.
- Pat the cod fillets dry and place them in the prepared baking dish.
- Spoon the lemon garlic marinade evenly over the cod fillets.
- Bake for 12–15 minutes until the cod is opaque and flakes easily with a fork.
- Garnish with chopped fresh parsley and lemon slices before serving.
