- 1 lb large shrimp, peeled and deveined
- 1 cup panko breadcrumbs
- 2 tablespoons Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper, to taste
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 2 tablespoons sriracha or hot sauce
- 1 teaspoon lime juice
- 1/2 teaspoon honey
- Pinch of red pepper flakes
Instructions
- Pat shrimp dry with paper towels and season lightly with salt and pepper.
- In one bowl, combine flour with garlic powder and smoked paprika. In a second bowl, beat the eggs. In a third bowl, mix panko breadcrumbs with Cajun seasoning.
- Dredge each shrimp in the flour mixture, then dip into beaten eggs, and finally coat with the seasoned breadcrumbs, pressing gently so crumbs stick.
- Heat vegetable oil in a skillet over medium-high heat. Fry the shrimp in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
- In a small bowl, whisk together mayonnaise, sriracha, lime juice, honey, and red pepper flakes.
- Serve the shrimp hot with the dipping sauce on the side or drizzled over the top.
