- 1/4 cupunsalted butter, melted
- 1 cupshelled pistachios, finely ground
- 1/4 cupconfectioners’ sugar
- 1/4 cupheavy cream
- 1 cupcream cheese, softened
- 1/2 cupconfectioners’ sugar
- 1 teaspoonvanilla extract
- 2 cupsfresh blackberries
- 1/2 cupgranulated sugar
- 1 tablespoonlemon juice
- 2 teaspoonscornstarch
- 1/4 cupshelled pistachios, chopped (for topping)
- Fresh blackberries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8 inch baking pan lined with parchment paper.
- Make the crust by combining crushed digestive biscuits with melted butter and pressing it into the bottom of the pan.
- Prepare the blackberry filling by cooking blackberries, granulated sugar, lemon juice, and cornstarch in a saucepan until thickened.
