A refreshing summer salad featuring blueberries, peaches, cucumbers, and feta cheese, dressed with a zesty vinaigrette.

- 1 pintfresh blueberries
- 2peaches, diced
- 2Persian cucumbers, sliced
- 1/2 cupcrumbled feta
- 3 tablespoonsfresh lemon juice
- 1 tablespoondijon mustard
- 1 tablespoonhoney
- 1 tablespoonolive oil
- 1 tablespoonfinely chopped basil
- Kosher salt and fresh ground black pepper to taste
Instructions
- In a large serving bowl combine the blueberries, peaches, cucumbers, and feta.
- In a jar with a lid or measuring cup combine the lemon juice, dijon, honey, olive oil, basil, salt, and pepper.
- Shake or whisk together the vinaigrette until well combined.
- Pour the vinaigrette over the salad and gently mix everything. Taste for seasoning and garnish with extra basil.
- Serve or cover and refrigerate the salad until ready to serve.
Notes
For added crunch, consider adding nuts like walnuts or pecans.
This salad can be made a few hours in advance; just keep it refrigerated.
