  • 1large butternut squash, peeled and sliced into1/2-inch rounds
  • 1 tbspolive oil
  • Salt and pepper, to taste
  • 1/4 cupmaple syrup
  • 1 tbspfresh sage, finely chopped
  • 1 tbspbutter
  • 1/2 cupcrumbled feta cheese
  • Fresh sage leaves for garnish (optional)
  • Chopped walnuts or pecans for added crunch (optional)
  • Drizzle of balsamic reduction for an extra layer of flavor (optional)
  • Substitute goat cheese for a tangy twist (optional)

Instructions

  1. Peel the butternut squash and slice it into 1/2-inch rounds.
  2. Prepare the feta filling by crumbling the feta cheese and mixing it with a splash of olive oil if desired.
  3. Assemble the towers by layering the butternut squash rounds and crumbled feta.
  4. Prepare the maple sage glaze by melting butter and mixing in maple syrup and chopped sage.
  5. Preheat the oven to 400°F (200°C) and bake the assembled towers for 20-25 minutes.
