A delicious and quick meal featuring shredded chicken, creamy avocado, and melted cheese wrapped in a tortilla.


Ingredients

  • 2large flour tortillas (or whole wheat for a healthy option)
  • 1 ½ cupsshredded chicken (rotisserie, grilled, or baked chicken)
  • 1ripe avocado, diced
  • ½ cupshredded cheddar cheese
  • ¼ cupshredded Monterey Jack cheese
  • ¼ cupfresh cilantro, chopped
  • ¼ cupdiced tomatoes
  • ¼ cupred onion, finely chopped
  • ¼ cupsour cream (or Greek yogurt for a healthier alternative)
  • 2 tbspchipotle sauce
  • 1 tbspolive oil
  • ½ tspsmoked paprika
  • ½ tspgarlic powder
  • ½ tspcumin
  • ½ tspsalt
  • ½ tspblack pepper
  • 1 tbspbutter

Instructions

  1. In a bowl, combine shredded chicken, chipotle sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Stir until the chicken is evenly coated.
  2. Heat olive oil in a pan over medium heat, add the seasoned chicken, and sauté for 3-4 minutes until warm and fragrant.
  3. Lay the tortillas on a clean surface.
  4. Spread sour cream evenly over each tortilla.
  5. Sprinkle cheddar and Monterey Jack cheese on top.
  6. Add the warm chicken in the center.
  7. Top with diced avocado, tomatoes, red onion, and fresh cilantro.
  8. Fold the sides inward and roll the tortilla tightly into a wrap.
  9. Heat a skillet or grill pan over medium heat.
  10. Melt butter and place the wraps seam-side down.
  11. Grill for 2-3 minutes per side until golden brown and crispy.
  12. Remove from heat, cut in half, and serve immediately with extra chipotle sauce or sour cream for dipping.

Notes

Adjust the amount of chipotle sauce to control the spiciness.
For a healthier option, use whole wheat tortillas and Greek yogurt.
Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
