- 3 CupsBaby Carrots
- 2 CupsMushrooms, sliced
- 2 CupsBeef Broth

- 2 tablespoonsTomato Paste
- 3 tablespoonsUnsalted Butter
- 1Bay Leaf
- 8Sprigs Fresh Thyme
- 1 tablespoonGarlic, minced
- Salt, to taste
- Pepper, to taste
- 1Onion, chopped (optional)
- 1 tablespoonWorcestershire Sauce (optional)
- 1 tablespoonSoy Sauce (optional)
- 1 teaspoonSmoked Paprika (optional)
Instructions
- Season the beef short ribs with salt and pepper on all sides.
- Sear the ribs in a large skillet over medium heat until browned on all sides.
- Prepare the sauce by sautéing minced garlic, adding tomato paste, and mixing in beef broth and optional ingredients.
- Layer baby carrots and mushrooms in the crockpot, then place the seared ribs on top and pour the sauce over them.
- Cook on low for about 8 hours or on high for about 4 hours until the ribs are tender.
