Ingredients

  • 3lbs Bone-In Beef Short Ribs
  • 3 CupsBaby Carrots
  • 2 CupsMushrooms, sliced
  • 2 CupsBeef Broth
  • 1 CupRed Wine (optional – see notes)
  • 2 tablespoonsTomato Paste
  • 3 tablespoonsUnsalted Butter
  • 1Bay Leaf
  • 8Sprigs Fresh Thyme
  • 1 tablespoonGarlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1Onion, chopped (optional)
  • 1 tablespoonWorcestershire Sauce (optional)
  • 1 tablespoonSoy Sauce (optional)
  • 1 teaspoonSmoked Paprika (optional)

Instructions

  1. Season the beef short ribs with salt and pepper on all sides.
  2. Sear the ribs in a large skillet over medium heat until browned on all sides.
  3. Prepare the sauce by sautéing minced garlic, adding tomato paste, and mixing in beef broth and optional ingredients.
  4. Layer baby carrots and mushrooms in the crockpot, then place the seared ribs on top and pour the sauce over them.
  5. Cook on low for about 8 hours or on high for about 4 hours until the ribs are tender.

Notes

Choose well-marbled beef short ribs for better flavor and tenderness.
Feel free to add more vegetables like potatoes or parsnips.
Leftovers can be frozen and reheated for a quick meal.
Adjust seasoning to taste before serving.
