  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 3 large eggs, lightly beaten
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 23 tablespoons soy sauce (adjust to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Spring onions, chopped for garnish

Instructions

  1. Prepare Ingredients: Have all ingredients ready and within reach.
  2. Cook Eggs: Heat 1 tablespoon oil in a large pan, add eggs, and cook, stirring until set. Remove and set aside.
  3. Sauté Vegetables: In the same pan, add remaining oil, onion, and garlic. Sauté until translucent. Add mixed vegetables and stir-fry until just tender.
  4. Combine and Fry: Add rice, breaking clumps. Stir in soy sauce and sesame oil. Mix well, then reintroduce eggs, breaking them into small pieces.
  5. Season and Garnish: Adjust seasoning with salt and pepper, mix well, and garnish with spring onions before serving.
