Ingredients

  • 2 boneless, skinless chicken breasts????
  • 2 cups (200g) broccoli florets????
  • 2 tbsp olive oil
  • Salt & black pepper????
  • 1/2 cup (120ml) Greek yogurt
  • 2 garlic cloves, minced????
  • 1 tbsp lemon juice????
  • 1 tbsp chopped fresh parsley????
  • 1/4 tsp paprika
  • Cooked rice or quinoa(for serving)

Instructions

  1. Pat the chicken dry. Rub with1 tbsp olive oil,salt, andpepper.
  2. Grill over medium heat until cooked through (about 6–8 minutes per side depending on thickness).
  3. Let rest for 5 minutes, then slice thinly.
  4. Toss broccoli florets with remaining1 tbsp olive oil,salt, andpepper.
  5. Roast at 425°F (220°C) for 20 minutes or grill until slightly charred and tender.
  6. In a bowl, mix together:Greek yogurtMinced garlicLemon juiceParsleyPaprika
  7. Greek yogurt
  8. Minced garlic
  9. Lemon juice
  10. Parsley
  11. Paprika
  12. Whisk until smooth and creamy. Add salt to taste.
  13. Spoon cookedrice or quinoainto bowls.
  14. Top with sliced chicken and roasted broccoli.
  15. Drizzle generously with creamy garlic sauce.
  16. Garnish with extra parsley if you’d like. Enjoy!
