Ingredients

  • 1lb lean ground beef
  • 2medium sweet potatoes, peeled and cubed
  • 1medium onion, diced
  • 3cloves garlic, minced
  • 1 tbspolive oil
  • 1 tspground cumin
  • 1 tsppaprika
  • ½ tspchili powder
  • Salt and pepper to taste
  • 1 cupbeef broth or water (optional)
  • 1bell pepper, diced (optional)
  • 1can black beans, drained and rinsed (optional)
  • 1 cupshredded cheddar cheese (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent.
  2. Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned.
  3. Introduce the cubed sweet potatoes to the skillet and stir well.
  4. Sprinkle ground cumin, paprika, chili powder, salt, and pepper over the mixture and stir to combine.
  5. If the skillet looks dry, add up to 1 cup of beef broth or water. Cover and reduce heat to medium-low, cooking for 12-15 minutes until sweet potatoes are tender.

Notes

Prep ahead by peeling and cubing sweet potatoes a day in advance.
Adjust cooking time based on the size of sweet potato cubes.
Consider marinating the ground beef with spices for extra flavor.
This dish makes great leftovers; store in an airtight container.
