- 1 cupbeef broth or water (optional)
- 1bell pepper, diced (optional)
- 1can black beans, drained and rinsed (optional)
- 1 cupshredded cheddar cheese (optional)
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent.
- Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned.
- Introduce the cubed sweet potatoes to the skillet and stir well.
- Sprinkle ground cumin, paprika, chili powder, salt, and pepper over the mixture and stir to combine.
- If the skillet looks dry, add up to 1 cup of beef broth or water. Cover and reduce heat to medium-low, cooking for 12-15 minutes until sweet potatoes are tender.
Notes
Prep ahead by peeling and cubing sweet potatoes a day in advance.
Adjust cooking time based on the size of sweet potato cubes.
