A flavorful and customizable breakfast bowl filled with savory sweet potatoes, scrambled eggs, and a medley of colorful vegetables.


Ingredients

  • 2medium russet potatoes, cut into cubes
  • 1large sweet potato, cut into cubes
  • 1pound spicy or sweet Italian sausage
  • 1 cupzucchini, diced
  • 1large green bell pepper, chopped
  • 1medium yellow or white onion, diced
  • 23cloves of garlic, chopped
  • 34tablespoons extra virgin olive oil (EVOO) or avocado oil
  • Flaky sea salt, to taste
  • Freshly cracked black peppercorns, to taste

Instructions

  1. Heat a large cast iron skillet over medium-high heat and add 1 tablespoon of oil.
  2. Cook the Italian sausage until browned and cooked through.
  3. Add diced onion to the skillet, then add cubed russet and sweet potatoes, seasoning with salt and pepper.
  4. Sauté the vegetables until browned, then add zucchini and bell pepper towards the end.
  5. Assemble the bowl starting with the potato mixture, then top with scrambled eggs and fresh herbs.

Notes

Prep ingredients the night before for a quicker morning routine.
Adjust the heat level by choosing spicy or sweet sausage.
Season to taste and experiment with different herbs and spices.
