Ingredients
- 4medium russet potatoes, diced
- 1 tablespoonolive oil
- ½pound breakfast sausage, crumbled
- ½ cupbell peppers, diced
- ½ cuponion, diced
- ½ teaspoongarlic powder
- ½ teaspoonsmoked paprika
- Salt and pepper to taste
- 4large eggs
- ½ cupshredded cheddar cheese
- 2green onions, sliced
- ¼ cupfresh parsley, chopped
Instructions
- Prep the ingredients by washing and dicing the potatoes, bell peppers, and onions.
- Heat olive oil in a large skillet over medium heat and add the diced potatoes. Cook for 10-12 minutes until golden brown and crispy.
- Add bell peppers and onions to the skillet and sauté for 3-4 minutes. Stir in garlic powder, smoked paprika, salt, and pepper. Create wells in the mixture and crack the eggs into them. Cover and cook until eggs reach desired doneness, about 4-5 minutes.
