Mashed Potato Cheese Puffs are a delightful dish featuring a crispy exterior and a warm, cheesy center, perfect for any occasion.


Ingredients

  • 3 cupsmashed potatoes (best if chilled)
  • 1 cupshredded cheese (cheddar, mozzarella, or your favorite melting cheese)
  • 1/4 cupall-purpose flour
  • 2 tablespoonsParmesan cheese (optional, for added flavor)
  • 2 tablespoonsfresh chives, finely chopped
  • 1/3 cupsour cream
  • Salt to taste
  • 2eggs, beaten

Instructions

  1. Boil and mash the potatoes until fork-tender, then let them cool.
  2. Mix in cheese and seasonings by whisking together eggs and sour cream, then adding the cheese, Parmesan, and chives.
  3. Form the puffs by gently folding the potato mixture into the cheese blend and filling muffin cups.
  4. Coat and fry or bake the puffs at 400°F (200°C) for 20-25 minutes until golden brown.

Notes

Chill your potatoes for better shaping.
Don’t overmix to maintain fluffiness.
Test a small puff for seasoning before baking the entire batch.
Let the puffs rest after baking for easier removal.
