Instructions
- Boil and mash the potatoes until fork-tender, then let them cool.
- Mix in cheese and seasonings by whisking together eggs and sour cream, then adding the cheese, Parmesan, and chives.
- Form the puffs by gently folding the potato mixture into the cheese blend and filling muffin cups.
- Coat and fry or bake the puffs at 400°F (200°C) for 20-25 minutes until golden brown.
