Roasted Tomato Soup

A delicious and comforting roasted tomato soup that is perfect for any occasion.


Ingredients

Scale
  • 3pounds ripe tomatoes (Roma or vine-ripened)
  • 2 tablespoonsextra virgin olive oil
  • 1medium onion, diced
  • 4cloves garlic, roughly chopped
  • 4 cupsvegetable broth
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the tomatoes and place them cut-side up on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Scatter the diced onion and garlic around the tomatoes.
  4. Roast for 30-35 minutes until the tomatoes soften and caramelize.
  5. Transfer the roasted veggies to a blender, add vegetable broth, and blend until smooth.
  6. Pour back into a pot, simmer, and adjust seasoning if needed. Stir in fresh basil before serving.

Notes

For a creamier soup, consider adding a splash of cream or coconut milk before serving.
Serve with crusty bread for a complete meal.
