Ingredients
- 1pound smoked sausage, sliced into1/2-inch pieces
- 1 1/2pounds baby potatoes, halved or quartered
- 2 tablespoonsolive oil
- 1medium onion, diced
- 2cloves garlic, minced
- 1 teaspoonsmoked paprika
- 1 teaspoonItalian seasoning
- 1/2 teaspoonsalt
- 1/4 teaspoonblack pepper
- 1bell pepper, sliced (any color)
- 1 cupfresh spinach (optional)
- 2 tablespoonsfresh parsley, chopped (for garnish)
Instructions
- Prepare the ingredients by chopping and slicing everything as needed.
- Cook the sausage in a skillet over medium heat until browned, about 4-5 minutes.
- Add the parboiled potatoes to the skillet and season with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until crispy.
- Return the cooked sausage to the skillet and combine everything. If using spinach, add it now and stir for 2 minutes.
- Let everything cook together for another 2-3 minutes, then garnish with fresh parsley before serving.

Parboil the potatoes for 8-10 minutes before adding them to the skillet.
