A comforting and hearty sausage and potatoes skillet recipe that is quick and easy to prepare, perfect for busy weeknights or gatherings.


Ingredients

  • 1pound smoked sausage, sliced into1/2-inch pieces
  • 1 1/2pounds baby potatoes, halved or quartered
  • 2 tablespoonsolive oil
  • 1medium onion, diced
  • 2cloves garlic, minced
  • 1 teaspoonsmoked paprika
  • 1 teaspoonItalian seasoning
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1bell pepper, sliced (any color)
  • 1 cupfresh spinach (optional)
  • 2 tablespoonsfresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients by chopping and slicing everything as needed.
  2. Cook the sausage in a skillet over medium heat until browned, about 4-5 minutes.
  3. Add the parboiled potatoes to the skillet and season with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until crispy.
  4. Return the cooked sausage to the skillet and combine everything. If using spinach, add it now and stir for 2 minutes.
  5. Let everything cook together for another 2-3 minutes, then garnish with fresh parsley before serving.

Notes

Parboil the potatoes for 8-10 minutes before adding them to the skillet.
Use a hot skillet to achieve a golden-brown crust on the sausage.
Feel free to customize with different vegetables or sausages.
Let the dish rest for a few minutes before serving to meld the flavors.
