Ingredients

  • 1lb Italian sausage (bulk or casing removed)
  • 1medium onion, chopped
  • 3cloves garlic, minced
  • 5 cupschicken broth
  • 2 cupsheavy cream (or milk for a lighter version)
  • 2 cupsfresh spinach, chopped
  • 1package cheese tortellini (about9 oz)
  • 1 teaspoonItalian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing
  • 1 cupdiced carrots (optional)
  • 1 cupdiced celery (optional)
  • Parmesan cheese for garnishing (optional)
  • Red pepper flakes for a spicy kick (optional)

Instructions

  1. Heat a large pot or Dutch oven over medium heat and add olive oil. Cook the Italian sausage for 5-7 minutes until browned.
  2. Transfer the cooked sausage to a plate, leaving the fat in the pot. Sauté the chopped onion for 3-4 minutes, then add minced garlic and cook for another minute.
  3. Pour in the chicken broth, add Italian seasoning, salt, and pepper. Return the sausage to the pot and bring to a gentle boil.
  4. Add the cheese tortellini and cook according to package instructions, about 5-7 minutes.
  5. Reduce heat to low, stir in heavy cream (or milk), and add chopped spinach. Warm through for 2-3 minutes without boiling.

Notes

Prep ahead by chopping vegetables the night before.
For extra flavor, add a splash of white wine after sautéing the onions and garlic.
This soup stores well in the fridge for up to three days.
Garnish with fresh herbs or a drizzle of olive oil before serving.
