A delicious recipe for shrimp tacos topped with fresh mango salsa.
Ingredients

- 1lb shrimp, peeled and deveined
- 1 tablespoonolive oil
- 1 teaspoonchili powder
- 8small corn tortillas
- 1mango, diced
- 1/2red onion, diced
- 1jalapeño, minced
- Juice of1lime
- Salt and cilantro for garnish
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, and salt. Set aside.
- In another bowl, combine mango, red onion, jalapeño, lime juice, and salt. Mix well and set aside.
- Heat a skillet over medium heat and cook shrimp for 2-3 minutes on each side until pink and cooked through.
- Warm tortillas in a dry skillet or microwave. Assemble tacos with shrimp and top with mango salsa. Garnish with cilantro.
Notes
Adjust the spiciness by adding more or less jalapeño.
For a sweeter salsa, use a ripe mango.
These tacos can be served with avocado or sour cream if desired.
