Ingredients
- 1 1/2lbsboneless, skinless chicken thighs (or chicken breasts)
- 1/2cupcreamy peanut butter
- 1/4cupsoy sauce (low-sodium)
- 1/4cupcoconut milk (or chicken broth)
- 2 tbsprice vinegar (or apple cider vinegar)
- 1 tbsphoney
- 2cloves garlic, minced
- 1 tspginger, grated
- 1/2 tspcrushed red pepper flakes (optional, for spice)
- 1/4cupchopped peanuts (for garnish)
- 2green onions, chopped (for garnish)
- Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Sauce:In a medium bowl, whisk together peanut butter, soy sauce, coconut milk, rice vinegar, honey, minced garlic, grated ginger, and crushed red pepper flakes until smooth.
- Add to Slow Cooker:Place the chicken thighs (or breasts) in the slow cooker and pour the peanut sauce over the top, ensuring all pieces are coated.
- Cook:Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
- Shred and Stir:Once cooked, use two forks to shred the chicken in the slow cooker. Stir to fully incorporate the sauce.
- Garnish and Serve:Serve over rice or noodles, garnished with chopped peanuts, green onions, and fresh cilantro.
Notes
For added texture, add sliced bell peppers, carrots, or snap peas to the slow cooker in the last hour of cooking.
Adjust the spice level by adding more or less red pepper flakes.
The sauce can be thickened by leaving the lid off the slow cooker for the last 15 minutes of cooking.
