- 1 lb smoked sausage, sliced into thick rounds
- 3 large white sweet potatoes, peeled and diced into cubes
- 3 tablespoons olive oil
- 3 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Toss diced white sweet potatoes with olive oil, thyme, rosemary, paprika, salt, and pepper.
- Spread evenly on a parchment-lined baking sheet and roast for 20–25 minutes until tender and slightly golden.
- In a skillet over medium heat, brown sausage slices until caramelized on the edges.
- Add honey and garlic to the skillet, stirring until sausage is coated and glaze thickens slightly.
- Combine the roasted white sweet potatoes with the glazed sausage in the skillet, tossing everything together.
- Garnish with fresh parsley before serving warm.
